Strawberry Pie Recipe

One of my favorite end of summer desserts is a pie made from freshly harvested strawberries. When it comes to making a fresh strawberry pie I usually use my mother’s cream cheese pie recipe and add the berry or other fruit ingredients.  
I grow everbearing strawberries and they are not as sweet, but they are still a good eating berry and these strawberries will provide you with a late-season crop as long as you keep watering them and feeding them once a week.  Now you can put up strawberries for preserves, add them to salads, serve them over ice cream, I like making pies.

If you are interested in making a pie from your garden harvested strawberries then you will need these ingredients:
1 package of cream cheese softened and cut into one-inch chunks
8 ounces sweetened condensed milk
1 cup of heavy whipped cream or one 8 ounce container of cool whip
1 cup diced fresh strawberries

Whipped cream for pie garnish (optional)
2 tablespoons of powdered sugar (optional use only if you desire a sweeter taste)
A ready-made graham cracker crust pie shell
Whipped cream and halved strawberries for pie garnish

1. Chill the beaters and large mixing bowl before making the pie filling.
2. Add the sweetened condensed milk to mixing bowl and mix with the softened cut into small pieced cream cheese and blend the ingredients together Sweeten this batter with two tablespoons of powdered sugar. Then fold in the whipped cream followed by the chopped strawberries and mangoes.
3. Turn over the pie filling into the graham cracker pie crust and smooth the top with the backside of a mixing spoon. Mound the pie filling in the center so it is higher than the sides. Cover pie with lid or saran wrap and freeze four hours.
4. Remove from the freezer and let the pie set for then minutes before serving.
5. Top the pie with whipped cream and whole strawberries, pointy side up. Optional dark chocolate shavings or magic shell chocolate sauce.
